The number of undernourished people has dropped by almost half in the past two decades because of rapid economic growth and increased agricultural productivity. Many developing countries that used to suffer from famine and hunger can now meet their nutritional needs. Central and East Asia, Latin America and the Caribbean have all made huge progress in eradicating extreme hunger.
Unfortunately, extreme hunger and malnutrition remain a huge barrier to development in many countries. There are 821 million people estimated to be chronically undernourished as of 2017, often as a direct consequence of environmental degradation, drought and biodiversity loss. Over 90 million children under five are dangerously underweight. Undernourishment and severe food insecurity appear to be increasing in almost all regions of Africa, as well as in South America.

The SDGs aim to end all forms of hunger and malnutrition by 2030, making sure all people–especially children–have sufficient and nutritious food all year. This involves promoting sustainable agricultural, supporting small-scale farmers and equal access to land, technology and markets. It also requires international cooperation to ensure investment in infrastructure and technology to improve agricultural productivity.
To provide meals for staff and students at the institute, there are three catering services that operate for a total of 294 consumers.

To ensure quality nutrition for students in the student dormitory, a kitchen has been established, equipped with modern gas stoves, refrigerators, microwaves, water coolers, clean drinking water, and a ventilation system.

Various culinary festivals and competitions are regularly organized on the territory of the institute and the student dormitory. In particularly, in 2023:
- On August 2, Samarkand Institute of Economics and Service held a barbecue (shashlik) festival. National dishes were presented, along with musical performances and sports competitions.
- As part of the "Month of Youth," “Plov Championship” festival took place. The Faculty of Banking and Financial Services won 1st place, the Faculty of Economics got 2nd, and the Faculty of Evening and Secondary Education took 3rd. There were also sports competitions in table tennis, tug of war, and arm wrestling for students and faculty. Additionally, small sports competitions in ping-pong game, tug- of -war, and arm wrestling were organized between students and faculty staff.
On December 27, 2023, Samarkand Institute of Economics and Service hosted a Republican scientific and practical conference on the topic "Food Safety and Proper Nutrition – the Key to a Healthy Society."

The integration of "science, education, and production" has begun, aimed at further developing the catering sector for residents and tourists based on world standards. Samarkand Institute of Economics and Service, Samarkand State Institute of Foreign Languages, International University of Tourism "Silk Road," the regional mono-center, the Sarteppo College of Tourism, and with the collaboration of restaurant "Khan Akhmat," ( part of the Shashlik.uz network in Samarkand). In partnership with industry, foreign language training has commenced based on global standards for training waiters, chefs, and specialists in meat processing. On March 6, 2023, a ceremony was held to launch these courses at the Samarkand Institute of Economics and Service.

In 2023, 48 specialists in "Organization of Nutrition for Residents and Tourists" completed their training at the Samarkand Institute of Economics and Service. A number of courses related to food safety and proper nutrition are taught at the institute, including "Food Production Technology," "Nutrition Features of World Peoples," "Food Science," "Standardization, Certification, and Metrology," "Sanitation and Hygiene," "Fundamentals of Designing Catering Enterprises," and "Diet and Basics of Rational Nutrition." The institute has a laboratory and kitchen used for teaching these subjects.
